Meet our Executive Chef Pat Marone
Chef Pat began his culinary career over 20 years ago. Throughout those years, he has been associated with numerous five-star restaurants including Naples 25 in the prestigious Americana Shopping Center on the Gold Coast of Long Island.
“I love to create new taste sensations for our residents especially for those with dietary restrictions. The Regency residents have become my family and I enjoy making their dining experience special.”
Chef Pat loves to create new recipes. Among his favorites are Cavatelli with sausage, mushrooms, and shallots in a pink cognac sauce and Salmon al Forno with capers, tomatoes, white wine and lemon which are included on the menus he handcrafts daily for the residents of The Regency.
He has introduced a new approach to the senior dining experience, implementing many changes that enhance The Regency Cuisine. He has thrown his heart and soul into the creation of a flavorful menu that appeals to a wide range of seniors without infringing on their dietary restriction and all food is made fresh on-premises.
“You would think my mother would want to stay in the state where they are known for their seniors, assisted-living, and nursing homes…Florida! But no… she wanted to go to her old stomping grounds on Long Island. Sure enough, I was able to find the Regency in Glen Cove. From the moment we walked in, I knew it was going to be the best living environment for her. From the tour, the recreational activities, to the care, living conditions, and people that work there, I have no problem leaving my mother 1200 miles away to her new place called home and I thank you.”
